Description
Create a hearty and healthy Beef & Roasted Veggie Power Bowl.
Ingredients
- 1 lb Beef sirloin, cut into 1-inch cubes
- 1 large Sweet potato, peeled and cubed
- 1 large Red onion, cut into wedges
- 1 Bell pepper (any color), seeded and chopped
- 2 cups Broccoli florets
- 2 tbsp Olive oil
- 1 tsp Garlic powder
- 1 tsp Paprika
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- Cooked Quinoa or Brown rice (for serving)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss sweet potato, red onion, bell pepper, and broccoli with olive oil, garlic powder, paprika, salt, and pepper.
- Spread vegetables in a single layer on a baking sheet.
- Place beef cubes on a separate area of the baking sheet.
- Roast for 20-25 minutes, or until vegetables are tender and beef is cooked to your desired doneness.
- Serve roasted vegetables and beef over cooked quinoa or brown rice.
Notes
- Adjust roasting time based on your oven and desired doneness of beef.
- Feel free to add other vegetables like zucchini, carrots, or mushrooms.
- For extra flavor, marinate beef cubes for 30 minutes before roasting.
