Description

Create a hearty and healthy Beef & Roasted Veggie Power Bowl.


Ingredients

  • 1 lb Beef sirloin, cut into 1-inch cubes
  • 1 large Sweet potato, peeled and cubed
  • 1 large Red onion, cut into wedges
  • 1 Bell pepper (any color), seeded and chopped
  • 2 cups Broccoli florets
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • Cooked Quinoa or Brown rice (for serving)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss sweet potato, red onion, bell pepper, and broccoli with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread vegetables in a single layer on a baking sheet.
  4. Place beef cubes on a separate area of the baking sheet.
  5. Roast for 20-25 minutes, or until vegetables are tender and beef is cooked to your desired doneness.
  6. Serve roasted vegetables and beef over cooked quinoa or brown rice.

Notes

  • Adjust roasting time based on your oven and desired doneness of beef.
