Description

Easy and flavorful baked ranch chicken and potatoes, perfect for a quick family meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1.5 lbs Yukon gold potatoes, cut into 1-inch pieces
  • 1 packet ranch seasoning mix
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Optional: chopped fresh parsley, for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes with 1 tablespoon olive oil, garlic powder, and pepper.
  3. Spread potatoes in a single layer on a baking sheet.
  4. In the same bowl, toss chicken with remaining 1 tablespoon olive oil and ranch seasoning mix.
  5. Arrange chicken evenly over the potatoes on the baking sheet.
  6. Bake for 20-25 minutes, or until chicken is cooked through and potatoes are tender.
  7. Garnish with fresh parsley, if desired, and serve.

Notes

  • For crispier potatoes, you can parboil them for 5 minutes before roasting.
