Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1.5 lbs Yukon gold potatoes, cut into 1-inch pieces
- 1 packet ranch seasoning mix
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Optional: chopped fresh parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes with 1 tablespoon olive oil, garlic powder, and pepper.
- Spread potatoes in a single layer on a baking sheet.
- In the same bowl, toss chicken with remaining 1 tablespoon olive oil and ranch seasoning mix.
- Arrange chicken evenly over the potatoes on the baking sheet.
- Bake for 20-25 minutes, or until chicken is cooked through and potatoes are tender.
- Garnish with fresh parsley, if desired, and serve.
Notes
- For crispier potatoes, you can parboil them for 5 minutes before roasting.
- Adjust ranch seasoning to your taste.
- Add other vegetables like broccoli or carrots to the baking sheet.
