Enjoy these simple baked feta potatoes. It is a healthy Greek dish. These roasted potatoes with feta cheese are flavorful.
Ingredients
- 1.5 lbs Yukon gold potatoes, cut into 1-inch pieces
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 oz feta cheese, crumbled
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes with olive oil, oregano, salt, and pepper.
- Spread potatoes in a single layer on a baking sheet.
- Bake for 30 minutes, or until potatoes are tender and golden brown.
- Remove from oven and sprinkle with feta cheese, lemon juice, and garlic.
- Return to oven and bake for another 5 minutes, or until feta is slightly melted.
- Serve immediately.
Notes
- For extra flavor, add a pinch of red pepper flakes.
- You can use other types of potatoes, such as russet or red potatoes.
- Adjust the amount of feta cheese to your liking.
