Description

Enjoy these simple baked feta potatoes. It is a healthy Greek dish. These roasted potatoes with feta cheese are flavorful.


Ingredients

  • 1.5 lbs Yukon gold potatoes, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 oz feta cheese, crumbled
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes with olive oil, oregano, salt, and pepper.
  3. Spread potatoes in a single layer on a baking sheet.
  4. Bake for 30 minutes, or until potatoes are tender and golden brown.
  5. Remove from oven and sprinkle with feta cheese, lemon juice, and garlic.
  6. Return to oven and bake for another 5 minutes, or until feta is slightly melted.
  7. Serve immediately.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
  • You can use other types of potatoes, such as russet or red potatoes.
