Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 pound asparagus, trimmed
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss asparagus with 1 tablespoon olive oil, salt, and pepper.
  3. Place asparagus on a baking sheet.
  4. Drizzle chicken breasts with remaining olive oil, salt, and pepper. Place on the same baking sheet as the asparagus.
  5. Bake for 20-25 minutes, or until chicken is cooked through and asparagus is tender.
  6. While chicken and asparagus are baking, melt butter in a small saucepan over medium heat.
  7. Add garlic and cook for 1 minute, until fragrant.
  8. Stir in lemon juice and zest.
