Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 pound asparagus, trimmed
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss asparagus with 1 tablespoon olive oil, salt, and pepper.
- Place asparagus on a baking sheet.
- Drizzle chicken breasts with remaining olive oil, salt, and pepper. Place on the same baking sheet as the asparagus.
- Bake for 20-25 minutes, or until chicken is cooked through and asparagus is tender.
- While chicken and asparagus are baking, melt butter in a small saucepan over medium heat.
- Add garlic and cook for 1 minute, until fragrant.
- Stir in lemon juice and zest.
- Pour lemon butter sauce over baked chicken and asparagus before serving.
