Ingredients
- 2 Honeycrisp apples, cored and thinly sliced
- 1 cup chopped walnuts, toasted
- 1/2 cup crumbled goat cheese
- 4 cups mixed greens
- 1/4 cup dried cranberries
- For the dressing:
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine mixed greens, sliced apples, toasted walnuts, goat cheese, and dried cranberries.
- In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, and honey. Season with salt and pepper.
