Description
A simple and delicious sheet pan meal featuring tender chicken thighs coated in Asiago cheese, roasted alongside flavorful Brussels sprouts.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1 lb Brussels sprouts, trimmed and halved
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Asiago cheese
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss Brussels sprouts with 2 tablespoons olive oil, half the minced garlic, Italian seasoning, salt, and pepper.
- Spread Brussels sprouts in a single layer on a large baking sheet.
- In the same bowl, toss chicken thighs with the remaining 2 tablespoons olive oil and the remaining minced garlic.
- Arrange chicken thighs among the Brussels sprouts on the baking sheet.
- Roast for 20-25 minutes, or until chicken is cooked through and Brussels sprouts are tender and slightly browned.
- Remove from oven and sprinkle Asiago cheese over the chicken.
- Return to oven for 2-3 minutes, until cheese is melted and bubbly.
Notes
- For crispier Brussels sprouts, ensure they are dry before tossing with oil.
- You can add other vegetables like chopped bell peppers or red onion to the sheet pan.
