Description

A simple and delicious sheet pan meal featuring tender chicken thighs coated in Asiago cheese, roasted alongside flavorful Brussels sprouts.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 lb Brussels sprouts, trimmed and halved
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Asiago cheese


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss Brussels sprouts with 2 tablespoons olive oil, half the minced garlic, Italian seasoning, salt, and pepper.
  3. Spread Brussels sprouts in a single layer on a large baking sheet.
  4. In the same bowl, toss chicken thighs with the remaining 2 tablespoons olive oil and the remaining minced garlic.
  5. Arrange chicken thighs among the Brussels sprouts on the baking sheet.
  6. Roast for 20-25 minutes, or until chicken is cooked through and Brussels sprouts are tender and slightly browned.
  7. Remove from oven and sprinkle Asiago cheese over the chicken.
  8. Return to oven for 2-3 minutes, until cheese is melted and bubbly.

Notes

  • For crispier Brussels sprouts, ensure they are dry before tossing with oil.
  • You can add other vegetables like chopped bell peppers or red onion to the sheet pan.
