Description
Delicious apricot shortbread bars with a buttery crust and sweet apricot filling. A perfect treat for any occasion.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup apricot jam
- 1/4 cup chopped dried apricots
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, cream together butter and sugar until light and fluffy.
- Gradually add flour and salt, mixing until just combined.
- Press half of the dough into the bottom of an ungreased 9×13 inch baking pan.
- Spread apricot jam evenly over the crust and sprinkle chopped dried apricots.
- Crumble the remaining dough over the apricot layer.
- Bake for 25-30 minutes, or until golden brown.
- Let cool completely before cutting into bars.
Notes
- For a tangier flavor, use a tart apricot jam.
- You can substitute other dried fruits, such as cranberries or cherries, for the apricots.
- Store in an airtight container at room temperature.
