Description

Delicious apricot shortbread bars with a buttery crust and sweet apricot filling. A perfect treat for any occasion.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup apricot jam
  • 1/4 cup chopped dried apricots


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream together butter and sugar until light and fluffy.
  3. Gradually add flour and salt, mixing until just combined.
  4. Press half of the dough into the bottom of an ungreased 9×13 inch baking pan.
  5. Spread apricot jam evenly over the crust and sprinkle chopped dried apricots.
  6. Crumble the remaining dough over the apricot layer.
  7. Bake for 25-30 minutes, or until golden brown.
  8. Let cool completely before cutting into bars.

Notes

  • For a tangier flavor, use a tart apricot jam.
  • You can substitute other dried fruits, such as cranberries or cherries, for the apricots.
