Description

Quick and easy air fryer sweet chili chicken and veggies for a healthy weeknight meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 cup broccoli florets
  • 2 tbsp sweet chili sauce
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp ginger powder
  • Salt and pepper to taste


Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. In a large bowl, combine chicken, bell peppers, onion, and broccoli.
  3. In a small bowl, whisk together sweet chili sauce, soy sauce, olive oil, garlic powder, ginger powder, salt, and pepper.
  4. Pour sauce over chicken and vegetables, and toss to coat evenly.
  5. Place chicken and vegetables in the air fryer basket in a single layer.
  6. Cook for 12-15 minutes, or until chicken is cooked through and vegetables are tender, flipping halfway through.
  7. Serve immediately.

Notes

  • Adjust sweet chili sauce to your preference.
  • For crispier vegetables, don’t overcrowd the air fryer basket. Cook in batches if necessary.
  • Serve over rice or quinoa for a complete meal.
