Description

Quick and easy chicken orzo pasta ready in just 30 minutes. A perfect weeknight family dinner.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil


Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from pot and set aside.
  3. Add onion and garlic to the pot and cook until softened, about 3 minutes.
  4. Stir in orzo pasta and chicken broth. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until orzo is cooked through and liquid is absorbed.
  5. Stir in sun-dried tomatoes, Parmesan cheese, and basil. Add chicken back to the pot and heat through.
  6. Serve immediately.
