Description
Quick and easy chicken orzo pasta ready in just 30 minutes. A perfect weeknight family dinner.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups chicken broth
- 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from pot and set aside.
- Add onion and garlic to the pot and cook until softened, about 3 minutes.
- Stir in orzo pasta and chicken broth. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until orzo is cooked through and liquid is absorbed.
- Stir in sun-dried tomatoes, Parmesan cheese, and basil. Add chicken back to the pot and heat through.
- Serve immediately.
Notes
- Add vegetables like spinach or zucchini for extra nutrients.
- Use vegetable broth instead of chicken broth for a vegetarian option.
- Adjust the amount of Parmesan cheese and basil to your taste.
