Quick and easy 20-minute garlic chicken stir fry. Perfect for a simple and healthy dinner.
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon cornstarch
- 1 teaspoon sesame oil
- Cooked rice, for serving
Instructions
- In a bowl, whisk together soy sauce, honey, cornstarch, and sesame oil. Set aside.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until browned and cooked through, about 5-7 minutes.
- Add garlic, red bell pepper, green bell pepper, and broccoli to the skillet. Cook until vegetables are tender-crisp, about 3-5 minutes.
- Pour sauce over chicken and vegetables. Cook until sauce thickens, about 1-2 minutes.
- Serve over cooked rice.
Notes
- For a spicier dish, add a pinch of red pepper flakes to the sauce.
- You can substitute other vegetables, such as carrots, snap peas, or zucchini.
- Serve with brown rice or quinoa for a healthier option.
