Description

A simple and creamy vegan Alfredo pasta made with almond milk and nutritional yeast.


Ingredients

  • 1 pound pasta
  • 4 cups unsweetened almond milk
  • 4 cloves garlic, minced
  • 1/2 cup nutritional yeast
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1 cup of pasta water.
  2. While pasta is cooking, heat almond milk in a saucepan over medium heat.
  3. Add minced garlic and nutritional yeast to the almond milk. Stir until well combined.
  4. Simmer for 5 minutes, stirring occasionally, until the sauce thickens slightly.
  5. Season with salt and pepper to taste.
  6. Add the drained pasta to the sauce. Toss to coat evenly.
  7. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  8. Serve immediately.

Notes

  • For a richer flavor, you can sauté the garlic in a tablespoon of olive oil before adding the almond milk.
