Ingredients

  • 2 tablespoons olive oil
  • 1 pound protein of choice (chicken, tofu, or plant-based)
  • 1 medium onion, diced
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 cup uncooked rice or grain of choice
  • 2 cups broth (vegetable or chicken)
  • 1 teaspoon seasoning blend (your favorite mix)
  • Salt and pepper, to taste
  • Fresh herbs for garnish (optional)


Instructions

  1. Sauté the Base: In a large skillet over medium heat, warm the olive oil. Add protein and cook until browned. Remove and set aside.
  2. Cook Aromatics: In the same pan, sauté onion and bell pepper until soft, about 4 minutes. Stir in garlic and cook for another 30 seconds.
  3. Toast the Rice: Add rice to the skillet and stir for 1-2 minutes to toast lightly and absorb the flavor.
  4. Combine and Simmer: Return protein to the pan. Add broth, seasonings, salt, and pepper. Stir to combine, bring to a simmer, cover, and cook for 20 minutes.
  5. Finish: Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and top with fresh herbs before serving.

Notes

Use any grain like quinoa or couscous in place of rice. For added color and nutrition, stir in a handful of spinach during the last 5 minutes of cooking. Adjust seasoning to taste and keep the lid closed while simmering for even cooking.
