Description

A quick and easy Texas Roadhouse-inspired butter chicken skillet recipe. This one-skillet meal features tender chicken in a rich, creamy butter sauce, perfect for a weeknight dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon garam masala
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15 ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 1/4 cup chopped fresh cilantro
  • Salt and black pepper to taste
  • Cooked rice, for serving


Instructions

  1. Season chicken pieces with salt and pepper.
  2. Melt butter and olive oil in a large skillet over medium-high heat.
  3. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add onion to the skillet and cook until softened, about 5 minutes.
  5. Stir in garlic and ginger and cook for 1 minute more until fragrant.
  6. Add garam masala, cumin, turmeric, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  7. Pour in crushed tomatoes and bring to a simmer.
  8. Stir in heavy cream and bring back to a gentle simmer.
  9. Return chicken to the skillet and cook for 5-7 minutes, or until chicken is cooked through and sauce has thickened.
  10. Stir in fresh cilantro. Season with salt and pepper to taste.
  11. Serve hot over cooked rice.

Notes

  • For a spicier dish, add more cayenne pepper.
  • If you don’t have fresh ginger, you can use 1/2 teaspoon ground ginger.
