Description
A quick and easy Texas Roadhouse-inspired butter chicken skillet recipe. This one-skillet meal features tender chicken in a rich, creamy butter sauce, perfect for a weeknight dinner.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon garam masala
- 1 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 1 (15 ounce) can crushed tomatoes
- 1 cup heavy cream
- 1/4 cup chopped fresh cilantro
- Salt and black pepper to taste
- Cooked rice, for serving
Instructions
- Season chicken pieces with salt and pepper.
- Melt butter and olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes.
- Stir in garlic and ginger and cook for 1 minute more until fragrant.
- Add garam masala, cumin, turmeric, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
- Pour in crushed tomatoes and bring to a simmer.
- Stir in heavy cream and bring back to a gentle simmer.
- Return chicken to the skillet and cook for 5-7 minutes, or until chicken is cooked through and sauce has thickened.
- Stir in fresh cilantro. Season with salt and pepper to taste.
- Serve hot over cooked rice.
Notes
- For a spicier dish, add more cayenne pepper.
- If you don’t have fresh ginger, you can use 1/2 teaspoon ground ginger.
