Description
This Sweet Potato Taco Bowl is a healthy, flavor-packed meal featuring roasted sweet potatoes, taco-seasoned meat or beans, fresh veggies, and a creamy cilantro lime yogurt sauce. Perfect for meal prep, customizable to any diet, and ready in under 40 minutes.
Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- ½ teaspoon paprika
- ¼ teaspoon sea salt
- 1 pound ground turkey or plant-based meat
- 1 packet taco seasoning (about 3 tablespoons)
- 1 can black beans, drained and rinsed
- 4 cups leafy greens (spinach, romaine, or spring mix)
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- Lime wedges for garnish
Cilantro Lime Sauce:
- 1 cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 3 tablespoons chopped fresh cilantro
- ½ teaspoon ground cumin
- ¼ teaspoon salt
- 1–2 tablespoons milk to thin (optional)
Instructions
- Roast the sweet potatoes: Preheat oven to 425°F. Toss diced sweet potatoes with olive oil, garlic powder, chili powder, paprika, and salt. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through.
- Cook the taco meat: Heat a skillet over medium heat. Add ground turkey or plant-based meat and cook until browned, about 5–6 minutes. Stir in taco seasoning and 2–3 tablespoons of water. Simmer until fully cooked.
- Prepare the sauce: In a bowl, mix Greek yogurt, mayo, lime juice, garlic, cilantro, cumin, and salt. Thin with milk if needed.
- Assemble the bowls: In each bowl, layer 1 cup leafy greens, ¼ of the taco meat, ¼ of the roasted sweet potatoes, ¼ cup black beans, tomato halves, avocado slices, and cilantro. Drizzle with sauce and garnish with lime wedges.
- Serve: Enjoy immediately, or store in meal prep containers for up to 4 days (keep dressing separate until serving).
Notes
For a spicier version, add jalapeños or hot sauce. To keep avocado fresh, slice right before serving or drizzle with lime juice. Great with tortilla chips or served in lettuce wraps.
