Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 pound sweet potatoes, peeled and cubed
  • 1 pound Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken, sweet potatoes, and Brussels sprouts with olive oil, salt, pepper, and garlic powder.
  3. Spread the mixture in a single layer on a large baking sheet.
