Description

A flavorful and healthy Spicy Salmon Coconut Rice Bowl. Enjoy flaky salmon with creamy coconut rice and a spicy kick.


Ingredients

  • 1 pound salmon fillet, skinless
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup coconut rice, cooked
  • 1/4 cup avocado, diced
  • 1/4 cup cucumber, diced
  • 2 tablespoons spicy mayo
  • 1 tablespoon sriracha
  • 1 green onion, sliced


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place salmon on a baking sheet lined with parchment paper.
  3. Drizzle with olive oil and sprinkle with chili powder, garlic powder, salt, and pepper.
  4. Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork.
  5. Flake the salmon into bite-sized pieces.
  6. In a bowl, combine coconut rice, avocado, and cucumber.
  7. Top with flaked salmon.
  8. Drizzle with spicy mayo and sriracha.
  9. Garnish with green onion.
  10. Serve immediately.
