Ingredients
- 1 pound salmon fillet, skinless
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup coconut rice, cooked
- 1/4 cup avocado, diced
- 1/4 cup cucumber, diced
- 2 tablespoons spicy mayo
- 1 tablespoon sriracha
- 1 green onion, sliced
Instructions
- Preheat oven to 400°F (200°C).
- Place salmon on a baking sheet lined with parchment paper.
- Drizzle with olive oil and sprinkle with chili powder, garlic powder, salt, and pepper.
- Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork.
- Flake the salmon into bite-sized pieces.
- In a bowl, combine coconut rice, avocado, and cucumber.
- Top with flaked salmon.
- Drizzle with spicy mayo and sriracha.
- Garnish with green onion.
- Serve immediately.
Notes
- Adjust the amount of sriracha to your spice preference.
- For a milder flavor, reduce the chili powder.
- You can use pre-cooked coconut rice to save time.
