Description

A flavorful and easy spicy chicken rice bowl perfect for a quick meal.


Ingredients

  • 1 lb boneless, skinless chicken thighs, cubed
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1/2 onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp sriracha
  • 1 tsp ginger, grated
  • 1/2 tsp red pepper flakes
  • 2 cups cooked rice
  • Optional toppings: green onions, sesame seeds


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned and cooked through.
  3. Add bell pepper and onion to the skillet and cook until softened.
  4. Stir in garlic, soy sauce, sriracha, ginger, and red pepper flakes.
  5. Cook for 1-2 minutes, until fragrant.
  6. Serve chicken mixture over rice.
  7. Garnish with green onions and sesame seeds, if desired.

Notes

  • Adjust the amount of sriracha and red pepper flakes to your desired spice level.
  • You can use chicken breast instead of chicken thighs.
