A flavorful and easy spicy chicken rice bowl perfect for a quick meal.
Ingredients
- 1 lb boneless, skinless chicken thighs, cubed
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1/2 onion, sliced
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp sriracha
- 1 tsp ginger, grated
- 1/2 tsp red pepper flakes
- 2 cups cooked rice
- Optional toppings: green onions, sesame seeds
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through.
- Add bell pepper and onion to the skillet and cook until softened.
- Stir in garlic, soy sauce, sriracha, ginger, and red pepper flakes.
- Cook for 1-2 minutes, until fragrant.
- Serve chicken mixture over rice.
- Garnish with green onions and sesame seeds, if desired.
Notes
- Adjust the amount of sriracha and red pepper flakes to your desired spice level.
- You can use chicken breast instead of chicken thighs.
