Description

A quick and healthy one-pan meal featuring seasoned ground beef and tender sweet potatoes with Southwest flavors.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 sweet potato (about 1 pound), peeled and diced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1/2 cup corn (fresh or frozen)
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, cilantro, avocado


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in minced garlic, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  5. Add the diced sweet potato, rinsed black beans, diced tomatoes with green chilies, and corn to the skillet.
  6. Stir everything together. Bring to a simmer, then reduce heat to medium-low.
  7. Cover and cook for 15-20 minutes, or until the sweet potatoes are tender. Stir occasionally.
  8. Season with salt and black pepper to taste.
  9. Serve hot, with optional toppings if desired.

Notes

  • For a spicier dish, add more cayenne pepper or a pinch of red pepper flakes.
  • If you don’t have fresh corn, canned or frozen corn works well.
  • This dish can be made ahead and reheated.
