This Shrimp Street Corn Skillet is a creamy, smoky, and flavor-loaded dish that combines sweet corn, juicy shrimp, and zesty lime crema in a single pan. Ready in just 30 minutes, it’s the perfect recipe for weeknight dinners or relaxed summer evenings with friends.
Ingredients
- 1 lb medium shrimp, peeled and deveined
- Zest of 1 lime
- 1 1/2 tsp chipotle chili powder
- 2 tsp kosher salt, divided
- 1/4 cup fresh lime juice
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 3 tbsp unsalted butter, divided
- 20 oz frozen corn kernels (or fresh cut from cob)
- 1 jalapeño, finely chopped (seeds removed for less heat)
- 2 scallions, thinly sliced (white and green parts separated)
- 3 garlic cloves, finely chopped
- 1/3 cup water
- 3 tbsp crumbled cotija cheese
- 2 tbsp finely chopped fresh cilantro
- 8 corn tortillas, warmed (optional)
Instructions
- Season the Shrimp: In a bowl, toss shrimp with lime zest, chipotle chili powder, and 1 tsp salt. Set aside to marinate while preparing other ingredients.
- Prepare the Crema: In a small bowl, stir together lime juice, mayonnaise, and sour cream. This will be your zesty crema.
- Cook the Corn Base: Heat 2 tbsp butter in a large cast iron or stainless steel skillet over medium-high. Add corn and cook undisturbed for 5 minutes to caramelize. Stir in jalapeño and white parts of scallions; cook for 3 more minutes. Add garlic and remaining 1/2 tsp salt; cook 1 more minute. Pour in water to deglaze the pan.
- Cook the Shrimp: Push the corn mixture to one side of the skillet. Add remaining 1 tbsp butter and the seasoned shrimp. Cook shrimp for 3–4 minutes, turning once, until pink and just cooked through.
- Combine and Finish: Stir shrimp and corn mixture together. Off heat, fold in half of the crema. Top with cotija cheese, cilantro, scallion greens, and more chili powder. Serve hot with warm tortillas and remaining crema.
Notes
Frozen corn works well year-round but use fresh corn when in season for extra sweetness. You can adjust heat by omitting the jalapeño or adding extra chipotle. Don’t overcook the shrimp—remove from heat as soon as they turn pink and opaque.
