Description

Prepare delicious and healthy shrimp meal prep bowls for two. Enjoy a quick and easy dinner or lunch.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked quinoa
  • 1 cup broccoli florets
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 2 tablespoons lemon juice


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss shrimp with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread shrimp on a baking sheet and bake for 8-10 minutes, or until pink and cooked through.
  4. Steam or roast broccoli florets until tender-crisp.
  5. In two meal prep containers, divide quinoa, broccoli, cherry tomatoes, and red onion.
  6. Top with cooked shrimp.
  7. Drizzle with lemon juice before serving.
