Ingredients
- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked quinoa
- 1 cup broccoli florets
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, sliced
- 2 tablespoons lemon juice
Instructions
- Preheat oven to 400°F (200°C).
- Toss shrimp with olive oil, garlic powder, paprika, salt, and pepper.
- Spread shrimp on a baking sheet and bake for 8-10 minutes, or until pink and cooked through.
- Steam or roast broccoli florets until tender-crisp.
- In two meal prep containers, divide quinoa, broccoli, cherry tomatoes, and red onion.
- Top with cooked shrimp.
- Drizzle with lemon juice before serving.
