Description

Quick and easy shrimp asparagus mushroom stir-fry, perfect for a healthy and delicious weeknight meal.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound asparagus, trimmed and cut into 2-inch pieces
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste


Instructions

  1. In a bowl, mix soy sauce, oyster sauce, sesame oil, and cornstarch. Set aside.
  2. Heat vegetable oil in a large skillet or wok over high heat.
  3. Add garlic and ginger, stir-fry for 30 seconds until fragrant.
  4. Add shrimp and cook until pink and opaque, about 2-3 minutes. Remove shrimp from skillet and set aside.
  5. Add asparagus and mushrooms to the skillet and stir-fry until tender-crisp, about 5-7 minutes.
  6. Return shrimp to the skillet.
  7. Pour sauce over shrimp and vegetables. Stir until sauce thickens, about 1-2 minutes.
  8. Season with salt and pepper to taste.
  9. Serve immediately over rice or noodles.

Notes

  • Adjust the amount of soy sauce and oyster sauce to your preference.
  • For a spicier dish, add a pinch of red pepper flakes.
  • You can substitute other vegetables, like broccoli or bell peppers.
