Description
Quick and easy shrimp asparagus mushroom stir-fry, perfect for a healthy and delicious weeknight meal.
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 pound asparagus, trimmed and cut into 2-inch pieces
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, mix soy sauce, oyster sauce, sesame oil, and cornstarch. Set aside.
- Heat vegetable oil in a large skillet or wok over high heat.
- Add garlic and ginger, stir-fry for 30 seconds until fragrant.
- Add shrimp and cook until pink and opaque, about 2-3 minutes. Remove shrimp from skillet and set aside.
- Add asparagus and mushrooms to the skillet and stir-fry until tender-crisp, about 5-7 minutes.
- Return shrimp to the skillet.
- Pour sauce over shrimp and vegetables. Stir until sauce thickens, about 1-2 minutes.
- Season with salt and pepper to taste.
- Serve immediately over rice or noodles.
Notes
- Adjust the amount of soy sauce and oyster sauce to your preference.
- For a spicier dish, add a pinch of red pepper flakes.
- You can substitute other vegetables, like broccoli or bell peppers.
