Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 lb broccoli florets
  • 1 red bell pepper, chopped
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the Sauce:
  • 1/4 cup maple syrup
  • 3 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken, broccoli, red bell pepper, and red onion with olive oil, salt, and pepper.
  3. Spread the mixture in a single layer on a large baking sheet.
