Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 lb broccoli florets
- 1 red bell pepper, chopped
- 1 red onion, cut into wedges
- 2 tablespoons olive oil
- Salt and pepper to taste
- For the Sauce:
- 1/4 cup maple syrup
- 3 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 clove garlic, minced
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the chicken, broccoli, red bell pepper, and red onion with olive oil, salt, and pepper.
- Spread the mixture in a single layer on a large baking sheet.
- In a small bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, and minced garlic.
- Pour the sauce evenly over the chicken and vegetables on the baking sheet.
- Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
