Description

A simple and healthy sheet pan dinner featuring chicken and green beans with a bright lemon garlic flavor. This is a perfect weeknight meal that requires minimal cleanup.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 lb fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, juiced
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, half of the minced garlic, oregano, salt, and pepper.
  3. In the same bowl, add the trimmed green beans and toss with the remaining 1 tablespoon of olive oil, the rest of the minced garlic, salt, and pepper.
  4. Spread the seasoned chicken in a single layer on one side of a large baking sheet.
  5. Spread the seasoned green beans in a single layer on the other side of the baking sheet.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the green beans are tender-crisp.
  7. Squeeze fresh lemon juice over the chicken and green beans.
  8. Garnish with fresh parsley before serving.

Notes

  • For crispier green beans, you can roast them for a few minutes before adding the chicken to the pan.
