Description
A simple and healthy sheet pan dinner featuring chicken and green beans with a bright lemon garlic flavor. This is a perfect weeknight meal that requires minimal cleanup.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 1 lb fresh green beans, trimmed
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, juiced
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, half of the minced garlic, oregano, salt, and pepper.
- In the same bowl, add the trimmed green beans and toss with the remaining 1 tablespoon of olive oil, the rest of the minced garlic, salt, and pepper.
- Spread the seasoned chicken in a single layer on one side of a large baking sheet.
- Spread the seasoned green beans in a single layer on the other side of the baking sheet.
- Bake for 20-25 minutes, or until the chicken is cooked through and the green beans are tender-crisp.
- Squeeze fresh lemon juice over the chicken and green beans.
- Garnish with fresh parsley before serving.
Notes
- For crispier green beans, you can roast them for a few minutes before adding the chicken to the pan.
- Adjust the amount of garlic to your preference.
- Feel free to add other vegetables like bell peppers or broccoli.
