Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 lb carrots, peeled and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the chicken pieces and carrot pieces with olive oil, salt, and pepper.
  3. Spread the chicken and carrots in a single layer on the prepared baking sheet.
