Ingredients
- 2 boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 lb broccoli florets
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into wedges
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine chicken, broccoli, bell peppers, and red onion.
- In a small bowl, whisk together olive oil, minced garlic, thyme, rosemary, salt, and pepper.
- Pour the olive oil mixture over the chicken and vegetables. Toss to coat evenly.
- Spread the mixture in a single layer on a large baking sheet.
- Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
