A simple and delicious sheet pan meal featuring flaky tilapia fillets baked with garlic butter and a medley of fresh vegetables. This recipe is perfect for a quick and healthy weeknight dinner.
Ingredients
- 1.5 lbs tilapia fillets
- 1 lb broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, cut into wedges
- 4 tbsp unsalted butter, melted
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- Lemon wedges, for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the broccoli florets, bell pepper slices, and red onion wedges with olive oil, salt, and pepper.
- Spread the vegetables in a single layer on a large baking sheet.
- Roast the vegetables for 15 minutes.
- While the vegetables are roasting, prepare the garlic butter sauce. In a small bowl, combine the melted butter, minced garlic, and dried oregano.
- Remove the baking sheet from the oven. Push the vegetables to one side.
- Place the tilapia fillets on the empty side of the baking sheet.
- Brush the tilapia fillets generously with the garlic butter sauce.
- Return the baking sheet to the oven and bake for another 10-12 minutes, or until the tilapia is cooked through and flakes easily with a fork.
- Serve the sheet pan tilapia and veggies immediately with lemon wedges.
Notes
- You can substitute other vegetables like asparagus, zucchini, or cherry tomatoes.
- Adjust the amount of garlic to your preference.
