Description

A simple and delicious sheet pan meal featuring flaky tilapia fillets baked with garlic butter and a medley of fresh vegetables. This recipe is perfect for a quick and healthy weeknight dinner.


Ingredients

  • 1.5 lbs tilapia fillets
  • 1 lb broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, cut into wedges
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • Lemon wedges, for serving


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the broccoli florets, bell pepper slices, and red onion wedges with olive oil, salt, and pepper.
  3. Spread the vegetables in a single layer on a large baking sheet.
  4. Roast the vegetables for 15 minutes.
  5. While the vegetables are roasting, prepare the garlic butter sauce. In a small bowl, combine the melted butter, minced garlic, and dried oregano.
  6. Remove the baking sheet from the oven. Push the vegetables to one side.
  7. Place the tilapia fillets on the empty side of the baking sheet.
  8. Brush the tilapia fillets generously with the garlic butter sauce.
  9. Return the baking sheet to the oven and bake for another 10-12 minutes, or until the tilapia is cooked through and flakes easily with a fork.
  10. Serve the sheet pan tilapia and veggies immediately with lemon wedges.

Notes

  • You can substitute other vegetables like asparagus, zucchini, or cherry tomatoes.
  • Adjust the amount of garlic to your preference.
  • Ensure the tilapia is fully cooked but do not overcook to prevent it from drying out.
