Description

This sheet pan garlic butter shrimp and broccoli is a quick and healthy one-pan meal perfect for a weeknight dinner. It’s simple to make and packed with flavor.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 head broccoli, cut into florets
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss broccoli florets with 1 tablespoon of olive oil, salt, and pepper on a large baking sheet. Spread in a single layer.
  3. Roast broccoli for 10 minutes.
  4. While broccoli roasts, melt butter in a small saucepan over medium heat. Add minced garlic and red pepper flakes (if using). Cook for 1 minute until fragrant. Remove from heat and stir in lemon juice.
  5. Add shrimp to the baking sheet with the partially roasted broccoli. Pour the garlic butter mixture over the shrimp and broccoli. Season with salt and pepper.
  6. Toss everything to coat evenly.
  7. Return the baking sheet to the oven and roast for another 8-10 minutes, or until shrimp is pink and cooked through and broccoli is tender-crisp.
  8. Garnish with fresh parsley before serving.
