This sheet pan garlic butter shrimp and broccoli is a quick and healthy one-pan meal perfect for a weeknight dinner. It’s simple to make and packed with flavor.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 head broccoli, cut into florets
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss broccoli florets with 1 tablespoon of olive oil, salt, and pepper on a large baking sheet. Spread in a single layer.
- Roast broccoli for 10 minutes.
- While broccoli roasts, melt butter in a small saucepan over medium heat. Add minced garlic and red pepper flakes (if using). Cook for 1 minute until fragrant. Remove from heat and stir in lemon juice.
- Add shrimp to the baking sheet with the partially roasted broccoli. Pour the garlic butter mixture over the shrimp and broccoli. Season with salt and pepper.
- Toss everything to coat evenly.
- Return the baking sheet to the oven and roast for another 8-10 minutes, or until shrimp is pink and cooked through and broccoli is tender-crisp.
- Garnish with fresh parsley before serving.
