Description

A simple and healthy sheet-pan dinner featuring chicken, broccoli, chickpeas, and Parmesan cheese.


Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 head broccoli, cut into florets
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken, broccoli, and chickpeas with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the mixture in a single layer on a large baking sheet.
  4. Roast for 20-25 minutes, or until the chicken is cooked through and the broccoli is tender.
  5. Sprinkle with Parmesan cheese during the last 5 minutes of cooking.
  6. Serve hot.

Notes

  • For extra flavor, you can add a squeeze of lemon juice before serving.
  • Feel free to substitute chicken breast for thighs if preferred.
