A simple and delicious one-pan meal featuring tender chicken and sweet potatoes roasted to perfection. This recipe is perfect for a quick and healthy weeknight dinner.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 medium sweet potatoes, peeled and cut into 1-inch cubes
- 1 red onion, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 0.5 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sweet potatoes and red onion with 1 tablespoon of olive oil, salt, and pepper.
- Spread the sweet potatoes and onion in a single layer on a large baking sheet.
- Roast for 15 minutes.
- While the vegetables roast, toss the chicken pieces with the remaining 1 tablespoon of olive oil, paprika, garlic powder, thyme, salt, and pepper.
- Add the seasoned chicken to the baking sheet with the partially roasted vegetables.
- Return the baking sheet to the oven and roast for another 20-25 minutes, or until the chicken is cooked through and the sweet potatoes are tender and slightly caramelized.
- Serve hot.
Notes
- You can add other vegetables like broccoli florets or bell peppers during the last 15-20 minutes of cooking.
- For a spicier dish, add a pinch of cayenne pepper to the chicken seasoning.
- Ensure all pieces are cut to a similar size for even cooking.
