These Sheet Pan Chicken Nachos are the ultimate easy, cheesy, one-pan meal. Packed with seasoned chicken, melty cheese, crispy chips, and all your favorite toppings, they’re perfect for family dinners, game nights, or casual get-togethers.
Ingredients
- 1 bag sturdy tortilla chips
- 2 cups cooked and shredded chicken (rotisserie works great)
- 2 cups shredded cheddar cheese (or Monterey Jack blend)
- 1 cup black beans, drained and rinsed
- 1 jalapeño, sliced
- 1/2 cup diced red onion
- 1/2 cup corn kernels (optional)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- Fresh cilantro, chopped
- Salsa, sour cream, and guacamole for serving
Instructions
- Preheat the Oven: Set oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly spray with oil.
- Season the Chicken: Toss shredded chicken with chili powder, cumin, salt, and pepper. Set aside.
- Assemble the Base: Spread half the tortilla chips evenly on the sheet pan. Sprinkle with half the chicken, beans, onions, corn, and cheese.
- Build the Layers: Repeat with remaining chips, chicken, and toppings, finishing with cheese on top.
- Bake: Place the sheet pan in the oven and bake for 8–10 minutes, or until cheese is melted and bubbly.
- Garnish and Serve: Remove from oven, sprinkle with fresh cilantro, and serve immediately with salsa, sour cream, and guacamole on the side.
Notes
For spicier nachos, add sliced jalapeños or a drizzle of hot sauce before baking. To make ahead, prep the chicken and toppings in advance, then assemble and bake right before serving. Always serve cold toppings like sour cream and guacamole on the side to keep chips crisp.
