Description

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into wedges
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 1 tablespoon BBQ seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chopped bell peppers, red onion wedges, and broccoli florets with olive oil, BBQ seasoning, salt, and pepper.
  3. Spread the seasoned vegetables in a single layer on a large baking sheet.
  4. Roast the vegetables for 10 minutes.
  5. Add the shrimp to the baking sheet with the vegetables, ensuring they are in a single layer.
  6. Return the baking sheet to the oven and bake for another 8-10 minutes, or until the shrimp is pink and cooked through and the vegetables are tender-crisp.
