A simple and delicious sheet pan dinner featuring BBQ meatballs and roasted potatoes. This recipe is perfect for a quick weeknight meal.
Ingredients
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/4 cup chopped onion
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup BBQ sauce
- 1 pound baby potatoes, quartered
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, salt, and pepper. Mix well.
- Form the mixture into 1-inch meatballs.
- In a separate bowl, toss the quartered potatoes with olive oil, salt, and pepper.
- Arrange the meatballs and potatoes in a single layer on a large baking sheet.
- Bake for 20 minutes.
- Remove the baking sheet from the oven. Brush the meatballs with BBQ sauce.
- Return to the oven and bake for another 10-15 minutes, or until the meatballs are cooked through and the potatoes are tender and browned.
Notes
- For extra flavor, you can add garlic powder to the meatball mixture.
- Serve with a side salad or steamed vegetables.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
