Description

A simple and delicious sheet pan dinner featuring BBQ meatballs and roasted potatoes. This recipe is perfect for a quick weeknight meal.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup BBQ sauce
  • 1 pound baby potatoes, quartered
  • 1 tablespoon olive oil


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, salt, and pepper. Mix well.
  3. Form the mixture into 1-inch meatballs.
  4. In a separate bowl, toss the quartered potatoes with olive oil, salt, and pepper.
  5. Arrange the meatballs and potatoes in a single layer on a large baking sheet.
  6. Bake for 20 minutes.
  7. Remove the baking sheet from the oven. Brush the meatballs with BBQ sauce.
  8. Return to the oven and bake for another 10-15 minutes, or until the meatballs are cooked through and the potatoes are tender and browned.
