Description

A simple and delicious sheet pan meal featuring BBQ chicken and potatoes, perfect for a weeknight dinner.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1.5 lbs baby potatoes, halved
  • 1/2 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, paprika, garlic powder, salt, and pepper.
  3. Spread the seasoned potatoes in a single layer on a large baking sheet.
  4. Bake the potatoes for 20 minutes.
  5. While the potatoes are baking, pat the chicken thighs dry and place them in the same bowl. Add the BBQ sauce and toss to coat evenly.
  6. After 20 minutes, remove the baking sheet from the oven. Add the BBQ chicken thighs to the baking sheet with the potatoes, ensuring everything is in a single layer.
  7. Return the baking sheet to the oven and bake for another 20-25 minutes, or until the chicken is cooked through and the potatoes are tender and slightly browned.
  8. Let rest for a few minutes before serving.

Notes

  • You can use chicken breasts instead of thighs, but adjust the cooking time to prevent drying out.
  • Feel free to add other vegetables like bell peppers or onions to the sheet pan.
