A simple and delicious sheet pan meal featuring BBQ chicken and potatoes, perfect for a weeknight dinner.
Ingredients
- 2 lbs boneless, skinless chicken thighs
- 1.5 lbs baby potatoes, halved
- 1/2 cup BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with olive oil, paprika, garlic powder, salt, and pepper.
- Spread the seasoned potatoes in a single layer on a large baking sheet.
- Bake the potatoes for 20 minutes.
- While the potatoes are baking, pat the chicken thighs dry and place them in the same bowl. Add the BBQ sauce and toss to coat evenly.
- After 20 minutes, remove the baking sheet from the oven. Add the BBQ chicken thighs to the baking sheet with the potatoes, ensuring everything is in a single layer.
- Return the baking sheet to the oven and bake for another 20-25 minutes, or until the chicken is cooked through and the potatoes are tender and slightly browned.
- Let rest for a few minutes before serving.
Notes
- You can use chicken breasts instead of thighs, but adjust the cooking time to prevent drying out.
- Feel free to add other vegetables like bell peppers or onions to the sheet pan.
- Serve with your favorite BBQ sauce for extra flavor.
