Ingredients
- 1.5 pounds carrots, peeled and cut into 1-inch pieces
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 cup whole milk ricotta cheese
- 2 tablespoons hot honey, plus more for drizzling
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the carrots with olive oil, salt, and pepper on a baking sheet.
- Roast for 25-30 minutes, or until tender and slightly caramelized.
- While the carrots roast, whip the ricotta cheese in a small bowl until smooth and creamy.
- Spread the whipped ricotta onto a serving platter.
- Arrange the roasted carrots over the ricotta.
- Drizzle with hot honey and sprinkle with fresh parsley.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the hot honey.
- If you don’t have hot honey, you can mix regular honey with a dash of your favorite hot sauce.
