A vibrant and refreshing corn salad perfect for any summer gathering, barbecue, or potluck. This easy-to-make salad features fresh corn, crisp vegetables, and a light, zesty dressing.
Ingredients
- 4 cups fresh or frozen corn kernels
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- If using fresh corn, cook kernels until tender. Drain and let cool. If using frozen corn, thaw and drain.
- In a large bowl, combine the corn kernels, diced red and green bell peppers, chopped red onion, cilantro, and parsley.
- In a small bowl, whisk together the olive oil, lime juice, apple cider vinegar, sugar, salt, and black pepper to make the dressing.
- Pour the dressing over the corn and vegetable mixture.
- Toss gently to coat all ingredients evenly.
- Chill for at least 30 minutes before serving to allow flavors to meld.
Notes
- For extra flavor, add a pinch of chili powder to the dressing.
- You can substitute jalapeño for some of the bell pepper for a spicier kick.
- This salad can be made a day in advance.
