Description

A vibrant and refreshing corn salad perfect for any summer gathering, barbecue, or potluck. This easy-to-make salad features fresh corn, crisp vegetables, and a light, zesty dressing.


Ingredients

  • 4 cups fresh or frozen corn kernels
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. If using fresh corn, cook kernels until tender. Drain and let cool. If using frozen corn, thaw and drain.
  2. In a large bowl, combine the corn kernels, diced red and green bell peppers, chopped red onion, cilantro, and parsley.
  3. In a small bowl, whisk together the olive oil, lime juice, apple cider vinegar, sugar, salt, and black pepper to make the dressing.
  4. Pour the dressing over the corn and vegetable mixture.
  5. Toss gently to coat all ingredients evenly.
  6. Chill for at least 30 minutes before serving to allow flavors to meld.

Notes

  • For extra flavor, add a pinch of chili powder to the dressing.
  • You can substitute jalapeño for some of the bell pepper for a spicier kick.
  • This salad can be made a day in advance.
