Description

Enjoy a flavorful and easy Oven-Baked Chicken Fajita Casserole. It’s a simple weeknight meal.


Ingredients

  • 1.5 lbs chicken breasts, cut into strips
  • 1 large bell pepper, sliced
  • 1 large onion, sliced
  • 1 packet fajita seasoning
  • 1 tbsp olive oil
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, salsa, guacamole


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken, bell pepper, and onion with olive oil and fajita seasoning.
  3. Spread mixture evenly in a 9×13 inch baking dish.
  4. Bake for 20-25 minutes, or until chicken is cooked through.
  5. Sprinkle with cheddar cheese and bake for another 5 minutes, or until cheese is melted.
  6. Serve with your favorite toppings.

Notes

  • Adjust fajita seasoning to your taste.
  • You can use different colored bell peppers.
