Description

Ingredients

  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 (9 oz) package cheese tortellini (refrigerated or frozen)
  • 1/2 cup sour cream
  • 1 tablespoon fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Brown the Beef: In a large skillet, heat olive oil over medium-high. Add ground beef and cook until browned. Drain excess fat if needed.
  2. Sauté Aromatics: Add chopped onion and minced garlic. Cook for 2–3 minutes until fragrant.
  3. Build the Sauce: Stir in Worcestershire sauce, Dijon mustard, thyme, salt, and pepper. Add beef broth and heavy cream, mixing well.
  4. Add Tortellini: Bring to a gentle simmer, then add cheese tortellini. Reduce heat to medium-low and cook uncovered for 7–9 minutes, stirring occasionally.
  5. Finish Creamy Sauce: Remove from heat and stir in sour cream. Mix until fully incorporated.
  6. Serve: Garnish with fresh parsley and grated Parmesan. Serve hot with garlic bread or salad if desired.

Notes

Use lean ground beef for a lighter version. To prevent curdling, always stir in sour cream off heat. For a gluten-free version, use gluten-free tortellini and check that your broth and seasonings are gluten-free. Add sautéed mushrooms for extra depth of flavor.
