Ingredients
- 1 tablespoon olive oil
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup heavy cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- 1 (9 oz) package cheese tortellini (refrigerated or frozen)
- 1/2 cup sour cream
- 1 tablespoon fresh parsley, chopped
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Brown the Beef: In a large skillet, heat olive oil over medium-high. Add ground beef and cook until browned. Drain excess fat if needed.
- Sauté Aromatics: Add chopped onion and minced garlic. Cook for 2–3 minutes until fragrant.
- Build the Sauce: Stir in Worcestershire sauce, Dijon mustard, thyme, salt, and pepper. Add beef broth and heavy cream, mixing well.
- Add Tortellini: Bring to a gentle simmer, then add cheese tortellini. Reduce heat to medium-low and cook uncovered for 7–9 minutes, stirring occasionally.
- Finish Creamy Sauce: Remove from heat and stir in sour cream. Mix until fully incorporated.
- Serve: Garnish with fresh parsley and grated Parmesan. Serve hot with garlic bread or salad if desired.
Notes
Use lean ground beef for a lighter version. To prevent curdling, always stir in sour cream off heat. For a gluten-free version, use gluten-free tortellini and check that your broth and seasonings are gluten-free. Add sautéed mushrooms for extra depth of flavor.
