Ingredients

  • 1.5 lbs boneless, skinless chicken thighs (or breasts), cut into chunks
  • 1 tablespoon olive oil
  • 5 cloves garlic, minced
  • 1/4 cup honey
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • Fresh chopped green onions or parsley, for garnish
  • Steamed rice or noodles, for serving


Instructions

  1. Sear the Chicken: Heat olive oil in a large skillet or pot over medium-high heat. Add seasoned chicken chunks and sear for 4–5 minutes until browned. Remove and set aside.
  2. Sauté the Garlic: In the same pot, reduce heat to medium. Add garlic and cook for 30 seconds, until fragrant (don’t burn it!).
  3. Create the Sauce: Add honey and soy sauce, stir, and scrape up browned bits from the bottom. Bring to a gentle simmer.
  4. Return Chicken & Simmer: Return chicken to the pot and stir to coat in sauce. Cover and simmer for 10–12 minutes until cooked through.
  5. Optional Thickening: Stir in the cornstarch slurry if you prefer a thicker glaze. Simmer uncovered for another 2–3 minutes.
  6. Finish & Serve: Garnish with green onions or parsley. Serve hot over rice or noodles.

Notes

Use chicken thighs for maximum juiciness, but breasts work well too. Adjust spice level with chili flakes or sriracha. For meal prep, store in airtight containers and reheat gently to preserve the glaze.
