Description
A simple and delicious one-pot meal featuring savory sausage, tender orzo pasta, and a rich garlic butter sauce. Perfect for a weeknight dinner.
Ingredients
- 1 tablespoon olive oil
- 1 pound sliced smoked sausage (like kielbasa or andouille)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 1/2 cups orzo pasta
- 3 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add sausage and cook until browned, about 5 minutes. Remove sausage and set aside.
- Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Stir in the orzo pasta and cook for 1 minute, stirring constantly.
- Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is al dente and most of the liquid is absorbed.
- Stir in the heavy cream, Parmesan cheese, and cooked sausage. Cook for another 2-3 minutes until heated through and sauce has thickened slightly.
- Stir in fresh parsley. Season with salt and pepper to taste.
- Serve hot.
Notes
- You can substitute any of your favorite cooked sausages.
- For a spicier dish, use andouille sausage or add a pinch of red pepper flakes.
- Feel free to add other vegetables like spinach or bell peppers along with the onions.
