Description

A simple one-pot meal featuring tender chicken and orzo pasta cooked in a rich garlic butter sauce. This dish is perfect for a quick and satisfying weeknight dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups chicken broth
  • 1 cup orzo pasta
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped


Instructions

  1. Heat olive oil and butter in a large pot or Dutch oven over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides. Remove chicken from the pot and set aside.
  3. Add chopped onion to the pot and cook until softened, about 5 minutes.
  4. Stir in minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
  5. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pot.
  6. Add the orzo pasta and stir. Return the browned chicken to the pot.
  7. Cover and simmer for 10-12 minutes, or until the orzo is cooked and most of the liquid has been absorbed, stirring occasionally.
  8. Stir in heavy cream and Parmesan cheese. Cook for another 2-3 minutes until the sauce thickens.
  9. Stir in fresh parsley.
  10. Serve hot.

Notes

  • For a spicier kick, add a pinch of red pepper flakes with the garlic.
  • Feel free to add in some spinach or peas in the last few minutes of cooking for extra vegetables.
