Description
A simple one-pot meal featuring tender chicken and orzo pasta cooked in a rich garlic butter sauce. This dish is perfect for a quick and satisfying weeknight dinner.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 tbsp butter
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups chicken broth
- 1 cup orzo pasta
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil and butter in a large pot or Dutch oven over medium-high heat.
- Add chicken pieces and cook until browned on all sides. Remove chicken from the pot and set aside.
- Add chopped onion to the pot and cook until softened, about 5 minutes.
- Stir in minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pot.
- Add the orzo pasta and stir. Return the browned chicken to the pot.
- Cover and simmer for 10-12 minutes, or until the orzo is cooked and most of the liquid has been absorbed, stirring occasionally.
- Stir in heavy cream and Parmesan cheese. Cook for another 2-3 minutes until the sauce thickens.
- Stir in fresh parsley.
- Serve hot.
Notes
- For a spicier kick, add a pinch of red pepper flakes with the garlic.
- Feel free to add in some spinach or peas in the last few minutes of cooking for extra vegetables.
