Description

A quick and easy one-pot pasta dish with ground beef and taco seasonings, finished with a creamy sauce. Perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 4 cups beef broth
  • 12 ounces pasta (such as penne or rotini)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Optional toppings: chopped cilantro, sour cream, sliced jalapeños


Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more.
  3. Stir in the diced tomatoes, Rotel tomatoes, beef broth, pasta, chili powder, cumin, paprika, salt, and pepper. Bring to a boil.
  4. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until the pasta is cooked al dente, stirring occasionally.
  5. Stir in the heavy cream and shredded cheese until the cheese is melted and the sauce is creamy.
  6. Serve immediately, with optional toppings if desired.

Notes

  • For a spicier dish, use a can of hot Rotel or add a pinch of cayenne pepper.
  • If the sauce is too thick, add a little more beef broth or water.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
