Ingredients

  • 1 tablespoon canola oil (or vegetable oil)
  • 3 boneless, skinless chicken breasts, cubed
  • 3 cups shredded cabbage or coleslaw mix
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1 cup snap peas
  • 2 teaspoons minced garlic
  • 1 teaspoon minced fresh ginger
  • 1/4-1/2 teaspoon red pepper flakes (optional)
  • 4 cups low-sodium chicken broth
  • 1/3 cup low-sodium soy sauce
  • 1/3 cup hoisin sauce
  • 12 oz chow mein noodles or spaghettini
  • 2 tablespoons water (optional, for thickening)
  • 1 tablespoon cornstarch (optional)
  • 1 tablespoon honey (optional)


Instructions

  1. Cook the Chicken: In a large skillet or wok, heat oil over medium-high heat. Add chicken cubes and cook until lightly browned and mostly cooked through.
  2. Add the Vegetables: Stir in cabbage, bell pepper, carrots, and snap peas. Cook for 2–3 minutes until slightly softened.
  3. Build the Flavor Base: Add garlic, ginger, and red pepper flakes. Stir for 1 minute until fragrant.
  4. Add Liquids and Noodles: Pour in chicken broth, soy sauce, and hoisin sauce. Bring to a boil, then add uncooked noodles. Stir to combine.
  5. Simmer: Reduce heat to medium, cover, and cook for 5–8 minutes, stirring occasionally, until noodles are tender and have absorbed most of the liquid.
  6. Optional Thickening: Mix cornstarch and water, then stir into the chow mein if a thicker sauce is desired. Adjust sweetness with honey if needed.
