Ingredients
- 1.5 lbs boneless skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 2 tbsp salted butter, divided
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 carrots, peeled and diced
- 1 yellow onion, diced
- 6 garlic cloves, minced
- 1 cup orzo pasta
- 2 1/2 cups chicken broth or water with bouillon
- 2 cups broccoli florets, chopped
- 1/2 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Season the Chicken: Toss chicken in a bowl with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
- Brown the Chicken: Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Brown chicken on all sides, about 5-6 minutes. Remove and set aside.
- Sauté Vegetables: In the same skillet, melt the remaining butter. Add diced carrots and onion, and cook for 6–7 minutes until soft. Stir in garlic and cook for 1 more minute.
- Toast the Orzo: Add orzo to the pan and stir constantly for 1 minute to toast.
- Simmer with Broccoli: Pour in broth and stir to deglaze the pan. Add broccoli, bring to a boil, then reduce heat, cover, and simmer for 12 minutes.
- Add Cream and Cheese: Stir in heavy cream, cheddar, and Parmesan until melted and creamy.
- Combine and Serve: Return chicken to the skillet and stir everything together. Serve hot with your favorite sides.
Notes
For best results, use freshly grated cheese. If the sauce is too thick, add a splash of broth or milk. This dish reheats well with a little extra liquid to loosen the sauce.
