Ingredients

  • 1.5 lbs boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 2 tbsp salted butter, divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 carrots, peeled and diced
  • 1 yellow onion, diced
  • 6 garlic cloves, minced
  • 1 cup orzo pasta
  • 2 1/2 cups chicken broth or water with bouillon
  • 2 cups broccoli florets, chopped
  • 1/2 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Season the Chicken: Toss chicken in a bowl with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  2. Brown the Chicken: Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Brown chicken on all sides, about 5-6 minutes. Remove and set aside.
  3. Sauté Vegetables: In the same skillet, melt the remaining butter. Add diced carrots and onion, and cook for 6–7 minutes until soft. Stir in garlic and cook for 1 more minute.
  4. Toast the Orzo: Add orzo to the pan and stir constantly for 1 minute to toast.
  5. Simmer with Broccoli: Pour in broth and stir to deglaze the pan. Add broccoli, bring to a boil, then reduce heat, cover, and simmer for 12 minutes.
  6. Add Cream and Cheese: Stir in heavy cream, cheddar, and Parmesan until melted and creamy.
  7. Combine and Serve: Return chicken to the skillet and stir everything together. Serve hot with your favorite sides.

Notes

For best results, use freshly grated cheese. If the sauce is too thick, add a splash of broth or milk. This dish reheats well with a little extra liquid to loosen the sauce.
