Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound ground beef (90% lean)
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 2 carrots, grated or finely chopped
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • 1 tablespoon soy sauce
  • 1 (14.5-ounce) can petite diced tomatoes (with juice)
  • 1/8 teaspoon ground cumin
  • 8 ounces elbow macaroni
  • 2 cups water or low-sodium beef broth
  • 1 teaspoon kosher salt (to taste)
  • 1/2 teaspoon freshly ground black pepper
  • Optional toppings: pickle slices, jalapeños, fried onions, chopped parsley


Instructions

  1. Brown the beef: Heat oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon, about 4–5 minutes.
  2. Add vegetables and spices: Stir in onions, garlic, carrots, and bell pepper. Cook 4–5 minutes, then season with salt, pepper, and cumin.
  3. Stir in sauce: Add ketchup, brown sugar, mustard, soy sauce, and diced tomatoes. Stir to combine and bring to a simmer for 5 minutes.
  4. Add pasta and liquid: Stir in macaroni and broth. Cover and simmer over medium-low for 8–10 minutes, until pasta is almost cooked.
  5. Uncover and finish cooking: Remove lid and cook another 3–5 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
  6. Serve and garnish: Turn off heat. Serve hot with desired toppings like pickles, parsley, or jalapeños.
