Ingredients
- 1 tablespoon vegetable oil
- 1 pound ground beef (90% lean)
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 2 carrots, grated or finely chopped
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon yellow mustard
- 1 tablespoon soy sauce
- 1 (14.5-ounce) can petite diced tomatoes (with juice)
- 1/8 teaspoon ground cumin
- 8 ounces elbow macaroni
- 2 cups water or low-sodium beef broth
- 1 teaspoon kosher salt (to taste)
- 1/2 teaspoon freshly ground black pepper

Instructions
- Brown the beef: Heat oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon, about 4–5 minutes.
- Add vegetables and spices: Stir in onions, garlic, carrots, and bell pepper. Cook 4–5 minutes, then season with salt, pepper, and cumin.
- Stir in sauce: Add ketchup, brown sugar, mustard, soy sauce, and diced tomatoes. Stir to combine and bring to a simmer for 5 minutes.
- Add pasta and liquid: Stir in macaroni and broth. Cover and simmer over medium-low for 8–10 minutes, until pasta is almost cooked.
- Uncover and finish cooking: Remove lid and cook another 3–5 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
