Ingredients
- 1 tablespoon olive oil

- 1 ½ lbs baby potatoes, halved or diced

- 1 cup diced onion
- 4 garlic cloves, minced
- 2 tablespoons tomato paste
- 2 cups beef broth (or chicken broth)
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon dried oregano
- 1½ cups shredded cheddar cheese
- Chopped green onions or parsley for garnish (optional)
Instructions
- Sear the Potatoes: In a large skillet, heat olive oil and butter over medium-high heat. Add potatoes and cook for 5–7 minutes until edges are golden. Remove and set aside.
- Brown the Beef: Add ground beef to the same skillet. Cook until browned, breaking it into crumbles.
- Build the Flavor Base: Stir in diced onion and garlic. Cook 1–2 minutes, then add tomato paste and seasonings. Mix well.
- Simmer with Broth: Return potatoes to the pan. Add broth, stir well, and cover. Simmer for 10–12 minutes until potatoes are fork-tender.
