Ingredients
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 5 oz spinach
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear chicken breasts for 2-3 minutes per side.
- Remove chicken from skillet and set aside.
- Add onion and garlic to the skillet and cook until softened.
- Stir in spinach and cook until wilted.
- Pour in chicken broth and heavy cream, then stir in Parmesan cheese.
- Return chicken to the skillet, nestling it into the sauce.
- Bake in the preheated oven for 15-20 minutes, or until chicken is cooked through.
- Serve immediately.
Notes
- You can use chicken thighs instead of chicken breasts.
- Add a pinch of red pepper flakes for a little heat.
- Serve over rice or pasta.
