Description

Enjoy a simple one-pan meal with creamy chicken and spinach. It’s quick, easy, and delicious.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 5 oz spinach
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear chicken breasts for 2-3 minutes per side.
  5. Remove chicken from skillet and set aside.
  6. Add onion and garlic to the skillet and cook until softened.
  7. Stir in spinach and cook until wilted.
  8. Pour in chicken broth and heavy cream, then stir in Parmesan cheese.
  9. Return chicken to the skillet, nestling it into the sauce.
  10. Bake in the preheated oven for 15-20 minutes, or until chicken is cooked through.
  11. Serve immediately.

Notes

  • You can use chicken thighs instead of chicken breasts.
  • Add a pinch of red pepper flakes for a little heat.
  • Serve over rice or pasta.
