Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs, room temperature
- 1 cup milk (dairy or plant-based)
- 1/2 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Prepare the Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the eggs, milk, oil, and vanilla. Stir gently until just combined — do not overmix.
- Fold in the Chocolate Chips: Gently stir in the chocolate chips, distributing them evenly throughout the batter.
- Fill the Muffin Pan: Line a muffin tin with paper liners or lightly grease it. Divide the batter evenly among 12 cups, filling each about two-thirds full.
- Bake: Place in a preheated 375°F (190°C) oven for 18–20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Cool and Enjoy: Let muffins cool in the pan for 5 minutes before transferring to a wire rack. Serve warm or at room temperature.
Notes
For bakery-style domes, start baking at 400°F (200°C) for the first 5 minutes, then reduce to 375°F (190°C) for the remaining time. To switch things up, try adding nuts, banana, or cocoa powder for a double chocolate version.
