These One-Bowl Apple Cinnamon Muffins are soft, moist, and full of warm spice. With everything mixed in just one bowl, cleanup is minimal and the recipe comes together in about 30 minutes. Perfect for breakfast, snacks, or cozy fall baking!
Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar (or coconut sugar for a healthier option)
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup vegetable oil or melted butter
- 1/2 cup milk (dairy or plant-based)
- 2 cups chopped apples (such as Granny Smith or Honeycrisp)
- 1 teaspoon vanilla extract
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- Mix Wet Ingredients: In one large bowl, whisk together eggs, sugar, oil, milk, and vanilla until smooth.
- Add Dry Ingredients: Add flour, baking powder, cinnamon, and salt directly into the bowl. Stir gently until just combined.
- Fold in Apples: Gently fold in chopped apples, being careful not to overmix the batter.
- Bake: Divide batter evenly into the muffin cups, filling each about 2/3 full. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Enjoy: Let muffins cool for 5 minutes in the pan before transferring to a wire rack. Serve warm or store for later.
Notes
For healthier muffins, substitute part of the flour with whole wheat flour and reduce the sugar. Applesauce can also replace some oil for extra moisture. Add nuts, raisins, or a streusel topping for variations.
