Enjoy this Low Carb Creamy Chicken Casserole for a quick, healthy, and family-friendly dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cooked and shredded
  • 1 head cauliflower, cut into florets
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam or boil cauliflower florets until tender. Drain well.
  3. In a large bowl, combine shredded chicken, cooked cauliflower, cream cheese, heavy cream, chicken broth, cheddar cheese, Parmesan cheese, minced garlic, onion powder, salt, and pepper.
  4. Mix well until all ingredients are evenly distributed.
  5. Grease a 9×13 inch baking dish with olive oil.
  6. Pour the chicken mixture into the prepared baking dish and spread evenly.
  7. Bake for 20-25 minutes, or until golden brown and bubbly.
  8. Let cool for a few minutes before serving.
