Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cooked and shredded
- 1 head cauliflower, cut into florets
- 4 oz cream cheese, softened
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Steam or boil cauliflower florets until tender. Drain well.
- In a large bowl, combine shredded chicken, cooked cauliflower, cream cheese, heavy cream, chicken broth, cheddar cheese, Parmesan cheese, minced garlic, onion powder, salt, and pepper.
- Mix well until all ingredients are evenly distributed.
- Grease a 9×13 inch baking dish with olive oil.
- Pour the chicken mixture into the prepared baking dish and spread evenly.
- Bake for 20-25 minutes, or until golden brown and bubbly.
- Let cool for a few minutes before serving.
