Description

Prepare these Low-Carb Chicken & Veggie Protein Boxes for a week of healthy, protein-packed meals. They are perfect for lunch or dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cooked and diced
  • 2 cups broccoli florets, steamed
  • 2 cups cauliflower florets, steamed
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 cup Kalamata olives, halved
  • 1/4 cup red onion, thinly sliced
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook chicken breasts using your preferred method (baking, grilling, or pan-frying). Dice into bite-sized pieces.
  2. Steam broccoli and cauliflower florets until tender-crisp.
  3. In a large bowl, combine cooked chicken, steamed broccoli, steamed cauliflower, cherry tomatoes, cucumber, Kalamata olives, and red onion.
  4. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper.
